Argentario Golf & Wellness Resort: the Dama Dama Restaurant triumphs with the organic cuisine of Executive ChefExecutive Chef Emiliano Lombardelli.
In our resort, there are two ingredients of considerable importance: the needs of our customers who want an increasingly "comfortable" cuisine and the fundamental work of culinary research by our Chef.
The result of these two prerogatives is significant: ours is an ambitious cuisine, characterized by the authenticity of the flavours and colours of the territory, abundant passion and a pinch of innovation.
Among Emiliano Lombardelli's most loved and well-known recipes is the “Sea bass in our oil, vegetable caponata and light basil sauce” (Spigola d’amo al nostro olio, caponata di verdure e salsa leggera di basilico) … a delicacy for the palate!
Eggplants, courgettes, peppers and tomatoes make up the caponata. These products are grown in the resort’s own organic vegetable garden.
However, the protagonist of this dish is the sea bass (spigola in Italian), caught on the hook and incredibly fresh.
Sliced and cleaned from the fishbones, the sea bass is gently browned on the skin side and finished cooking in the oven for a few minutes.
A few drops of basil sauce are added as a decorative element.
Add a drizzle of our organic olive oil and the dish is ready!
